Summery Pink Lemonade Bars

This week I have a great recipe for you guys that you can do over the summer for a delicious treat. This treat is sweet, tangy and refreshing which to me all sound like descriptions of summer. This treat is a great example of one of my favorite drinks LEMONADE.  We are going to be making some delicious Pink Lemonade Bars. This delicious recipe comes from a website full of other delicious recipes called epicurious.com.

Pink Lemonade Bars:

Ingredients:

For the lemonade filling you will need:

  • 1 container of raspberries
  • 2 eggs
  • ¾ of a cup of granulated sugar
  • ¼ of a cup of lemon juice ( fresh or store bought)
  • ⅛ of a teaspoon of salt
  • 1 tablespoon of pomegranate juice or any pink or red colored juice
  • 2 tablespoons of flour all purpose flour
  • confectioners sugar for the top of bars

For the crust you will need:

  • 6 tablespoons of unsalted butter cut into cubes at room temperature
  • ¾ of a cup of all purpose flour and an additional 2 tablespoons of all purpose flour
  • ⅓ of a cup of confectioners sugar
  • ½ of a teaspoon of salt
  • ¼ of a teaspoon of thinly grated zest of a lemon

Instructions:

Crust

  1. We will start by making the crust. The first thing you want to do is make sure you have a rack in the middle of your oven and preheat oven to 350
  2. Next spray an 8 by 8 pan with cooking oil and put a layer of parchment overlapping over the sides of the pan.
  3. Then mix together in a food processor on high flour, confectioners sugar, salt and the lemon zest, then add in the butter and mix until dough has formed.
  4. Next make sure to press the dough into the preparing pan making about half way up the sides of the pan.
  5. Lastly use a fork to make tiny holes throughout the dough and bake for around 29 minutes.

Filling

  1. Now onto the filling, First blend the raspberries into a blender and put the pureed raspberry through a sieve into a bowl.
  2. Next, mix together the eggs, granulated sugar, and lemon juice in a separate bowl.
  3. Then, use a whisk to mix in raspberry puree, juice of your choice and salt. Then whisk in the flour
  4. Then pour the filling into the prepared crust and bake until the filling is set and bake for an additional 20 minutes.
  5. Lastly move the pan onto a wire rack and let cool completely. Once cooled cut into squares and enjoy.

This recipe is a great one for the summer time because I tend to like fruity desserts during the summer time and this is a perfect refreshing dessert guaranteed all will love.  They may not be the prettiest but they sure are delicious.
