3 “Better than PB&J” Lunches

I know from personal experience that we can all get tired of the same old lunches, as in the same peanut butter and jelly sandwich that we end up eating almost every day. Although, not everyone has the time to make a gourmet lunch everyday of the week. So, here are three awesome lunches to spice up your meals throughout the week.

 

1) Hold the Fish Sushi

The first lunch is easy and simple and kids are sure to love! This dish requires only three ingredients seaweed, rice, and soy sauce. Hold the fish sushi is basically self assembled sushi that is fish free so you will have no worry about it spoiling in your lunch. Although, most people don’t have the time to make rice, but don’t worry there is an easy solution. In stores like Trader Joes, they sell microwavable rice that is very easy to cook in the morning and it only takes three minutes. Seaweed isn’t a problem either because at most stores you can find individually wrapped packages for less than a dollar. The only thing left is the soy sauce, which can be a hassle to pack, but to make things easier you can use the little soy sauce packages from restaurants or pour the soy sauce from the bottle into a plastic baggie and when ready to use just snip the tip.  To eat, just pour the soy sauce in the rice and pick up the mixture with the seaweed. It is inexpensive, easy, fast, and DELICIOUS!

 

2)  Personal Pizza Muffins

This next recipe is something fun to do with your family that can be brought to school the next day. They are pizza muffins! The ingredients for this is premade pizza dough, pizza sauce, shredded cheese, and any toppings of your desire. What you need to do is first preheat the oven to the temperature the dough calls for. Then, grease either a cupcake or muffin tin (if you would like a bigger pizza use the muffin tin) and take pieces of the dough and cover the bottom of each muffin mold. When you do this, try to cover the sides a little. Now, it’s time to personalize your pizza. Cover the dough with the sauce, cheese, and any other toppings. This is the part where you can have a lot of fun dressing up and personalizing each of your pizzas because remember each pizza is your masterpiece. Bake for about 10-15 minutes or until the dough is fully cooked. Once those beauties are out of the oven wait for them to cool and then just pop them out. VOILA! Personal pizza muffins!

 

3) Chips with Homemade Guacamole

Chips and guac is a great lunch and is the best when it is homemade. If you have never made guacamole or just want a delicious and simple guac this is perfect for you! This recipe requires more prep than putting the whole dish together, but both steps are very easy. The key to great guac is three avocados because avocado is the base of the dish. A life trick to finding the perfectly ripened avocados is to take the little stem off of the avocado and if it is green underneath then it is ripe. The other ingredients really add a lot of flavor and texture to the dish. With the three avocados, you will need half of a jalapeno, one lime, half of a large red onion, one clove of garlic, three tablespoons of cilantro, one teaspoon salt, and tabasco. To prep, you will need to peel and pit the avocados, juice the lime, seed and dice the jalapeno half, dice the half of the red large onion, and lastly mince the clove of garlic. Once you are done prepping it is time to put everything together! First what you want to do is mash the avocado with a fork until you have a smooth chunky texture. Then add in the rest of the ingredients and gently mix. When this is done you are ready to pack it for lunch. If you are like me and need a little more to your meal, you can eat this with a quesadilla or maybe even a salad, but know matter what these chips and guacamole will be the star of your lunch!
