This week we are making meringues. To make meringues you need:



  1. 4 egg whites
  2. 1 pinch of salt
  3. ¼ teaspoon of cream of tartar
  4. 1 ⅓ cup sugar
  5. ½ teaspoon of lemon zest


  1. Preheat the oven to 275°F and line cookie pans with parchment paper
  2. In a none greases bowl, whip together the egg whites, cream of tartar and pinch of salt until they look like soft peaks
  3. Then add in the sugar a tablespoon at a time and stop whipping when they have stiff peaks
  4. Next, you fold in the lemon zest
  5. You then put about 1 ½ tablespoons of the mixture on to the pans and bake for 35 minutes or until they can peel off without sticking
