Ginger Dead Men Cookies

LOW-FAT GINGER-DEADMEN COOKIES

This week I chose this recipe because I thought it would be fun to try something different during Halloween time. They’re called Ginger-Deadmen cookies and the recipe includes making cookies and royal icing from scratch. Being a holiday favorite, I thought it would be fun to try making gingerbread cookies into a Halloween treat. It was also fun to decorate these cookies by using the royal icing to bring the cookies to life. They have an autumn flavor or a warm winter taste and are best when they are freshly made.

The 7th and 8th grade classes tried out the Gingerbread cookies during recess time recently. Many loved them and they wanted to know more about their ingredients. They were simple to make and the instructions were easy to understand. Now they can enjoy them at home with this recipe and share their thoughts on making and decorating them.

 

Ingredients for Cookies

• 3 tablespoons of unsalted butter

• ½ cup applesauce

• 1/3 cup of dark Molasses

• 1 tablespoon of water

• 2 teaspoons ground Ginger

• ¾ teaspoon Cinnamon

• ½ teaspoon ground Cloves

• 2 teaspoons vanilla

• 1/4 teaspoon of salt

• 1 Egg

• Lemon Zest

• 3 Cups of Flour

• 1 teaspoon Baking Soda

• 1 ½ teaspoons of Baking Powder

• ½ Cup of Brown Sugar

Ingredients for Royal Icing

• ¼ Cup of Merengue powder

• 4 Cups Convectors sugar

• ½ Cup Water

Directions

¸ Pre-heat oven to 375 degrees. (Make sure your parent or an adult is supervising)

¸ Beat butter, brown sugar and apple sauce in a mixing bowl until smooth.

¸ Add eggs and molasses

¸ In another bowl, combine flour, baking soda, baking powder and spices.

¸ Add to sugar and molasses mixture.

¸ Spray baking sheet with non-stick spray.

¸ Roll cookie dough into small size balls or rollout dough and sprinkle with flour using a cookie

cutter.

¸ Space apart 2 inches on baking sheet

¸ Place in oven and bake for 20 minutes.

¸ Remove from heat and let cool for 5 minutes.

¸ Enjoy. Makes about 2 to 3 dozens

Directions for Royal icing

• Add water and merengue powder into mixing bowl.

• Mix well

• Add the confectioners’ sugar

• Mix until icing becomes creamy.

* Royal icing should be added to cookies that have been cooled.
